SAUVIGNON BLANC
Sauvignon Blanc is the variety that is perhaps the most
complex for us to make, as we put in so much effort into
the selection of the various parcels of fruit, and ensure
we have a wide range of components available for blending.
With all of our wines we focus on palate texture, rather
than primary fruit aromas, aiming to make them tactually
satisfying, and this applies to Sauvignon in particular.
By using hand-picking parcels, barrel-fermentation, wild
yeasts, and some malo-lactic at times we aim to produce
a complex, rich style of Sauvignon, that lasts well on
the palate and suits enjoyment with good food.
